Chefs Jac, Abi sa pagdating ng Michelin Guide sa PH: ‘It will be challenging!’

Chef Jac Laudico, Chef Abi Balingit

Ang mga bituin ay ibinibigay ng mga anonymous at independent food inspectors gamit ang ilang criteria, kabilang na ang quality of the ingredients, mastery of cooking techniques, harmony of flavors, personality of the cuisine, at consistency both over time and through the menu as a whole.

Sey ni Chef Abi, “It’s a great honor to showcase amazing food that Filipinos are making. Honestly, I’ve been travelling around the world and I think Filipino food is still the best food.”

Hirit naman ni Chef Jac, “Bringing the Michelin in the Philippines is really something that you have to commit your resources and your government and your sponsorship. Because it’s not free. They just randomly go to countries.”

“So for them to be here, it’s a good sign that our government are willing to promote our cuisine on that leve,” patuloy niya.

Ang sagot niya, “Well, at least it will give us a chance na I hope a lot of restaurants will get recognized in the list, because it is globally accepted na rin. But I think it will be very inspiring for restaurateurs and I think it will be challenging.”

Paalala pa niya, “Maybe it’s good to see yourself at a certain standard but then don’t make it your everything. We don’t need others to validate.”
